Ingredients

  • 1 block extra firm tofu, pressed to remove liquid as much as possible
  • 1 lime, juiced
  • 2 tablespoons soy sauce
  • 1 teaspoon maple syrup
  • 1 teaspoon Sriracha
  • 1 thumb-sized hunk of fresh ginger, grated
  • 1 clove garlic, minced

Garnish and serving options

  • Thinly sliced scallions
  • Fresh cilantro
  • Micro greens
  • Peanut sauce

Directions

  1. Mix together lime juice, soy sauce, syrup, Sriracha, ginger, and garlic in a large bowl.
  2. Slice the block of tofu to make two thin square blocks, stack one on top of the other, then slice both squares into 16 small squares.
  3. Toss the tofu blocks into the sauce and let marinate for a half hour.
  4. Lay the tofu blocks on the air fryer basket sheet and cook for 15 minutes at 370 degrees.
  5. Transfer the cooked tofu blocks to a large serving plate, add preferred garnish option(s), spear each block with a toothpick, and serve with peanut sauce.
