This is my go-to when craving comfort food on a cold and rainy day. Even better if there’s a grilled cheese or tuna sando to go with.
Chile relleno
A stuffed, roasted, fresh poblano pepper with a flavorful mixture of beef, beans and cheese. We made extras and they were great left over.
Curried Red Kidney Beans and Cauliflower with Spinach
This flavorful stew was a great way to finish off the cold and snowy day. Rich, warm, Indian flavors come together with lots of nutrient-packed veggies for a dish that’s both tasty and healthy.
White Bean Chicken Chili
This is a really lovely meal to make on a cold and snowy day. We had it over rice for dinner, then when we reheated it for lunch the next day we had it without and it was equally as good. Even though it starts with a couple of pieces of bacon, it’s a fairly lean recipe. The Cotija cheese is a bright pop of flavor on top and the cilantro really finishes it.

I love when I start getting pounds upon pounds of sweet, fresh, delicious tomatoes from the farm each August.
Chicken Tikka Masala
Another inspiration from Mark’s Daily Apple, this is a staple comfort food in our house. It makes a big batch so there’s always leftovers for reheating, or serving with eggs, or making pizza with. 😉
Spinach, Red Lentil, and Green Bean Curry
This is a very mild curry (which you could heat up with some cayanne and/or crushed red pepper if that’s your preference) and it has notes of cinnamon from the garam masala.
Roasted Eggplant with Tomato Stuffing
This can easily fly solo as a vegetarian main course, or be served as a hearty side to a simple sausage or chicken breast.
Warm Heirloom Cherry Tomato Salad
Colorful and flavorful – it does a great job of balancing the sweet tomatoes with salty Parmesan cheese.
