Ingredients

  • 1 pound sweet potatoes
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1/2 cup milk
  • 2 eggs
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2-3 strips thick-cut bacon
  • 1 leek, sliced
  • 1/4 cup goat cheese crumbles

Crust

  • 1 cup pecans
  • 1/2 cup hazelnuts
  • 4 tablespoons butter
  • a pinch of salt

Directions

  1. Preheat oven to 350.
  2. Make crust: grind nuts in food processor, mix with butter and salt, press into pie pan, bake for 10 minutes.
  3. Boil the sweet potatoes whole (including skin) for 45 minutes, strain, let sit in cold water for a few, and then peel the skin off.
  4. Mix potatoes and butter well, then add sugar, eggs, milk, vanilla, cinnamon, and nutmeg. Beat until smooth and pour into crust.
  5. Bake for about an hour.
  6. While pie is baking, cook bacon in a skillet and set aside to be broken into small pieces.
  7. Saute leeks in the bacon fat and set aside.
  8. When pie is cooled, sprinkle bacon pieces, leeks, and goat cheese crumbles all over the top. Serve at room temp.
