I make this at least twice a year as a gift for my Gram since it’s her favorite. It’s the perfect accompaniment for so many things, and it goes quickly at any tea party. I’ve used this same recipe to make any other citrus curd by swapping out the lemon for orange, lime, or grapefruit – so good!
Kidney Bean Soup with Lime Yogurt
This soup is high in protein, low in fat, and has a wealth of vitamin A. It’s also got a fantastic thick and creamy consistency. As far as flavor goes you get the standard kidney bean with the tangy yogurt and sweet lime all at once. Then that’s all rounded out with the cumin and chili powder for a wonderful finish.
