Ingredients
- 1 pound sweet potatoes
 - 1/2 cup butter, softened
 - 3/4 cup sugar
 - 1/2 cup milk
 - 2 eggs
 - 1/2 teaspoon nutmeg
 - 1/2 teaspoon cinnamon
 - 1 teaspoon vanilla
 - 2-3 strips thick-cut bacon
 - 1 leek, sliced
 - 1/4 cup goat cheese crumbles
 
Crust
- 1 cup pecans
 - 1/2 cup hazelnuts
 - 4 tablespoons butter
 - a pinch of salt
 
Directions
- Preheat oven to 350.
 - Make crust: grind nuts in food processor, mix with butter and salt, press into pie pan, bake for 10 minutes.
 - Boil the sweet potatoes whole (including skin) for 45 minutes, strain, let sit in cold water for a few, and then peel the skin off.
 - Mix potatoes and butter well, then add sugar, eggs, milk, vanilla, cinnamon, and nutmeg. Beat until smooth and pour into crust.
 - Bake for about an hour.
 - While pie is baking, cook bacon in a skillet and set aside to be broken into small pieces.
 - Saute leeks in the bacon fat and set aside.
 - When pie is cooled, sprinkle bacon pieces, leeks, and goat cheese crumbles all over the top. Serve at room temp.
