Ingredients

  • Olive oil spray
  • 2-3 freshly grated potatoes
  • 1/2 onion, diced
  • 1/2 bell pepper, diced
  • 1 garlic clove, minced
  • 1 cup cut broccoli
  • 1/3 cup finely chopped ham
  • 1/3 cup milk
  • 2 tablespoons flour
  • 8-10 eggs
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon julienned fresh basil
  • 1/4 teaspoon black pepper
  • Fresh basil sprigs for garnish

Directions

  1. Preheat oven to 350 degrees. Lightly coat a square baking dish with olive oil.
  2. Saute onion, bell pepper, and garlic for a few minutes in a skillet with butter or olive oil.
  3. Arrange hash brown potatoes, onion, pepper, and broccoli in bottom of baking dish; top with ham. Set aside.
  4. Stir milk gradually into flour in a medium bowl. Stir in eggs, half of the cheese, basil, and black pepper. Pour egg mixture over vegetables.
  5. Bake for 40 to 45 minutes or until knife inserted near the center comes out clean. Sprinkle with remaining cheese. Let stand for 5 minutes. If desired, garnish with fresh basil sprigs.
