Ingredients

  • 1 head cauliflower – remove florets from head and slice into bite-size chunks
  • 1/2 large onion, diced
  • 3 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • a handful of fresh cilantro, chopped
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper

Directions

  • Preheat oven to 450
  • Whisk together oil, vinegar, cilantro and all spices in a large bowl. Toss cauliflower and onion in bowl and stir until coated thoroughly.
  • Spread veggies on a deep dish baking sheet or in a roasting pan. Roast for 25 minutes, stirring to rotate a few times periodically, until fork tender.
