Ingredients
- 1 head cauliflower – remove florets from head and slice into bite-size chunks
 - 1/2 large onion, diced
 - 3 tablespoons olive oil
 - 1 tablespoon rice vinegar
 - a handful of fresh cilantro, chopped
 - 2 teaspoons curry powder
 - 1 teaspoon turmeric powder
 - 1 teaspoon cumin powder
 - 1 teaspoon cumin seeds
 - 1 teaspoon coriander powder
 - 1/2 teaspoon paprika
 - 1/2 teaspoon salt
 - 1/2 teaspoon pepper
 - 1/4 teaspoon cayenne pepper
 
Directions
- Preheat oven to 450
 - Whisk together oil, vinegar, cilantro and all spices in a large bowl. Toss cauliflower and onion in bowl and stir until coated thoroughly.
 - Spread veggies on a deep dish baking sheet or in a roasting pan. Roast for 25 minutes, stirring to rotate a few times periodically, until fork tender.
