  1. Combine gin or mezcal, beet shrub, and lemon juice in a cocktail shaker with ice and shake
  2. Strain into a rocks glass with ice and top with a splash of ginger beer
  3. Slice a piece of fresh orange peel, twist over the liquid, rub along the rim, and drop into the glass
  4. Garnish with a sprig of fresh rosemary and serve
