Ingredients

  • 2 large beets, diced
  • 1 inch piece of fresh ginger, sliced thin
  • 1/2 lemon, cut into chunks
  • 1 teaspoon black peppercorns
  • 1 teaspoon salt
  • 1 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup sherry vinegar
  • 1/4 cup red wine vinegar
  • splash of white vinegar

You can use a total of ~1 cup any vinegar you’d like, I just happened to use this mixture to get a different flavor blend.

Directions

  1. Put the beets, ginger, lemons, peppercorns, salt, and sugar into a container, stir, and cover with a lid.
  2. Let sit in the fridge for about a day, stirring once or twice in between.
  3. Add the vinegar, stir, and let sit for another couple days.
  4. Strain the beets and use the liquid for making delicious cocktails and mocktails.
