Ingredients
- 2 large beets, diced
- 1 inch piece of fresh ginger, sliced thin
- 1/2 lemon, cut into chunks
- 1 teaspoon black peppercorns
- 1 teaspoon salt
- 1 cup sugar
- 1/2 cup apple cider vinegar
- 1/4 cup sherry vinegar
- 1/4 cup red wine vinegar
- splash of white vinegar
You can use a total of ~1 cup any vinegar you’d like, I just happened to use this mixture to get a different flavor blend.
Directions
- Put the beets, ginger, lemons, peppercorns, salt, and sugar into a container, stir, and cover with a lid.
- Let sit in the fridge for about a day, stirring once or twice in between.
- Add the vinegar, stir, and let sit for another couple days.
- Strain the beets and use the liquid for making delicious cocktails and mocktails.
