Ingredients
- 2 6oz cans of salmon
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups milk
- 2 cups frozen peas
- salt and pepper
- lemon
- fresh dill
- Saltine crackers or toast for serving
Directions
- Melt the butter in a skillet or saucepan over medium heat.
- Add the flour and begin whisking. If the mixture begins sticking or browning, lower the heat. Whisk until the flour has absorbed the butter.
- Add the milk a little at a time while whisking. It will turn into a clumpy paste, just keep whisking until everything is smooth and thickened.
- Season with salt and pepper to taste.
- Add the frozen peas and stir gently with a spoon.
- Open the can of salmon, drain the liquid, and add the salmon to the pan. Break up into bite-sized pieces and stir gently into the mix.
- Simmer for a minute or two until the salmon is warmed through. If the sauce is too thick, add a splash of milk and stir in gently until it reaches your desired consistency.
- Squeeze a little lemon juice and sprinkle fresh dill into the mix; stir gently.
- Serve with toast or saltines.
