Ingredients
For piping:
- 2 cups confectioners’ sugar
 - 4 teaspoons meringue powder
 - 3 tablespoons warm water
 - 1 tablespoon freshly-squeezed lemon juice
 
For flooding:
- 2 cups confectioners’ sugar
 - 4 teaspoons meringue powder
 - 6 tablespoons warm water
 - 1 tablespoon freshly-squeezed lemon juice
 
Directions
- Combine all of the ingredients in the bowl of your stand mixer.
 - Beat on high for 5 minutes.
 - For piping icing will look like white glue, for flooding icing will look like soup, very runny.
 
Icing that is not being immediately used must be stored in an air-tight container.
