Ingredients

  • 2 cups cooked quinoa
  • 1/2 cup chopped radishes
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion, preferably red
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped red bell pepper
  • 1-2 tablespoons olive oil
  • juice of 1/2 freshly squeezed lemon
  • salt and pepper to taste

Directions

  1. To cook the quinoa, put 1 cup rinsed quinoa into a pot with 2 cups boiling water. Reduce heat and simmer for about 15 minutes.
  2. When cooled, combine all ingredients together into a big bowl. Mix well.
  3. Serve chilled or at room temperature.
