It’s that time of year… We recently went apple picking with family at QuonQuont Farm. Then I picked up some fresh baby ginger and turmeric from the Hampshire College Farm. What better way to meld these beautiful flavors than to cook up a sauce for any occasion.

Ingredients

  • ~10 apples, peeled and diced (I used several different varieties from the orchard)
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 thumb-sized chunk of fresh baby ginger
  • 1 thumb-sized chunk of fresh baby turmeric
  • 1 small (or 1/2 of a large) cinnamon stick

Directions

  1. Put the apple pieces, water, and lemon juice into a large saucepan and bring to a boil. Lower the heat and simmer.
  2. Grate ginger and turmeric into the simmering apples and stir.
  3. Add cinnamon stick.
  4. Simmer for 45 minutes to an hour; stir occasionally.
  5. Remove cinnamon stick.
  6. If you like applesauce a little chunky like I do then serve as is. If you prefer smooth sauce, put in the food processor or blend briefly before serving.
