Ingredients

  • 1 cup sugar
  • 1/2 cup butter, room temp
  • 2 eggs
  • t tablespoon orange zest
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • a pinch of ground ginger
  • a pinch of freshly grated nutmeg
  • 1/2 cup pecans, chopped and toasted

Directions

  1. Preheat oven to 325 degrees and butter 2 baking sheets
  2. Beat sugar and butter in a large bowl until blended
  3. Add eggs, one at a time, beating well after each
  4. Beat in orange zest and vanilla
  5. Stir flour, baking powder, cinnamon, salt, ginger, and nutmeg into a medium bowl
  6. Add dry ingredients and nuts to butter mixture; mix just until incorporated
  7. Divide dough in half and place each piece on prepared sheet
  8. With lightly floured hands, form each half into a log that is 3 inches in width by 3/4 inch height
  9. Bake until dough logs are firm to the touch, about 35 minutes.
  10. Transfer logs to work surface and, using a serrated knife, cut on a diagonal 1/2 inch thick slices
  11. Arrange cut sides down on baking sheets and bake about 10 minutes, then turn biscotti over and bake another 10 minutes longer
  12. Transfer to rack and cool
