Ingredients

  • 1 lb ground venison
  • 1 lb ground pork
  • 1/2 cup onion, grated or finely chopped
  • 4 garlic cloves, finely minced
  • 2 large eggs
  • 2/3 cup whole milk
  • 1 cup parmesan cheese
  • 1 1/2 cups panko
  • 4 tablespoons fresh parsley, chopped
  • 3 teaspoons garlic powder
  • 3 teaspoons dried basil
  • 3 teaspoons oregano
  • 2 teaspoons red pepper flakes
  • 3 teaspoons salt
  • 1 teaspoon black pepper
  • Olive oil

Directions

  1. Preheat the oven to 400 degrees
  2. Lightly drizzle a rimmed baking sheet with olive oil
  3. In a medium-sized bowl, combine panko, dry seasonings, beaten eggs, and milk and allow to soak for 1-2 minutes
  4. Add in onions, garlic, parmesan cheese, and parsley to the breadcrumb bowl, then add the ground meats and mix gently by hand to combine (do not over-work)
  5. Roll out “golf ball” sized meatballs
  6. Place meatballs on the baking sheet and lightly drizzle olive oil on top of meatballs
  7. Bake for 18-20 minutes, or until browned and cooked through
