Ingredients
- 2 tablespoons olive oil
- 1 small chopped onion
- 1 chopped red pepper
- 2 cloves minced garlic
- 1/2 pound ground meat cooked, or a couple chicken breasts cooked and chopped into chunks, or 1/2 bag of soy crumbles (optional)
- 1 large (29 oz) can diced tomatoes (the ones with the mild green chiles are great)
- 1 large (29 oz) can black beans
- 1 large (29 oz) can red kidney beans
- 1 (15 oz) can garbanzo beans
- 1 bag (16 oz) frozen corn
- 1/4 – 1/2 cup of your favorite BBQ sauce and/or hot sauce (optional)
- 1/4 cup of your favorite salsa
- 1 tablespoon chili powder
- salt, pepper, crushed red pepper, cumin – any seasoning to taste
Directions
- In a large pot saute the onion, red pepper and garlic in olive oil.
- If you want to add meat or veggie crumbles, add it now.
- Add the chili powder and any other spices.
- Add the salsa and all other ingredients.
- Cook and serve when hot, or you can put it all together in the crockpot and let it simmer for as long as you like.
