Ingredients
- 1 1/4 cups white flour
- 1/2 cup wheat flour
- 1 1/2 cups pure maple syrup
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup coconut oil
- 1/3 cup water
- 2 eggs
- 1 cup pumpkin
- 1/2 cup walnuts, chopped
- 1/2 cup raisins
Directions
- Preheat oven to 350. Spray bottom only of a loaf pan with cooking spray.
- In a large mixing bowl blend maple syrup, coconut oil, water, eggs and pumpkin. In a medium mixing bowl combine flours, baking soda, salt, cinnamon and nutmeg. Slowly add the dry mixture to the wet, combining thoroughly. Fold in walnuts and raisins.
- Bake for 60 minutes or until a toothpick comes out clean. Cool in the pan for 20 minutes, then transfer to a cooling rack for another 20. Slice and eat, warm or cool, with or without cream cheese spread over a slice.
