Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 eggs, beaten
  • 1/2 cup bread crumbs
  • olive oil spray

Directions

  1. Preheat oven to 350.
  2. Halve the chicken breasts so that you have two small pieces rather than one long one. Coat each piece of chicken in flour. Add salt and pepper to the eggs. Dip the chicken pieces in egg, thoroughly coating. Roll the chicken around in bread crumbs; be sure to coat the chicken all over.
  3. Place the chicken on a baking sheet and spray each piece lightly with olive oil on the top side. Bake for 20 minutes. Flip the chicken over and spray what is now the top side and bake for 15 minutes. Serve hot as a meal, bring it room temp for a picnic, or eat it cold the next day as a snack or on top of a salad.
