- 4 medium/large parsnips, shredded/grated with a grater or mandolin
- 1 teaspoon maple syrup
- a handful of fresh chives, chopped
- 2 eggs
- 1/2 cup coconut flour (would also work well with all-prupose or almond flour)
- salt and pepper
- coconut oil (or your preferred oil for light frying)
- Heat oil in a skillet.
- Mix all ingredients in a bowl.
- Scoop and form into patties/cakes.
- Fry for a few minutes on each side.
