• 4 medium/large parsnips, shredded/grated with a grater or mandolin
  • 1 teaspoon maple syrup
  • a handful of fresh chives, chopped
  • 2 eggs
  • 1/2 cup coconut flour (would also work well with all-prupose or almond flour)
  • salt and pepper
  • coconut oil (or your preferred oil for light frying)


  1. Heat oil in a skillet.
  2. Mix all ingredients in a bowl.
  3. Scoop and form into patties/cakes.
  4. Fry for a few minutes on each side.
