- 2 ripe avocados; peeled, pitted and mashed
- 1/4 red onion, diced
- 1 large tomato, diced (on the vine tastes best)
- juice from 1 fresh lime
- 1-2 cloves of garlic, minced
- 1/4 cup coarsely chopped fresh cilantro
- black pepper and salt to taste
- Mash avocados with fork in medium bowl.
- Combine all ingredients. Serve immediately or refrigerate until serving (place one of the avocado pits in the bowl to help keep it fresh if you’re not serving right away).
