Ingredients

  • 1 lb chicken livers
  • 1 small onion, cut in half
  • 1/2 cup water or chicken broth (plus additional 1/2 cup water/broth as throw-away simmer juice)
  • 1 stick butter
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon Worcestershire Sauce
  • 1/2 teaspoon curry powder (optional)

Directions

  1. Simmer chicken livers and onion for 10 – 15 minutes in water or chicken broth
  2. Drain chicken livers, add fresh 1/2 cup chicken broth (or water), and the onion to a blender
  3. Add the spices, then cover and blend
  4. With the motor on high, add 1 stick butter, 1 tablespoon at a time
  5. Transfer to container and chill (preferably overnight)
