Ingredients
- 1/2 cup honey
- 1/2 cup real maple syrup
- 3/4 cup water
- 1/3 cup apple juice
- 2 tablespoons coconut oil (butter or shortening may be substituted)
- 1 egg
- 2 cups whole wheat flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup cubed fresh apple
- 1/4 teaspoon nutmeg
- 1/2 teaspoon ground cloves
- 1 teaspoon cinnamon
Directions
- Heat oven to 350.
- Grease bottom only of 9×5 loaf pan.
- Combine honey, maple syrup, water, apple juice, oil, and egg and blend well.
- Add flour, baking powder, salt, baking soda, nutmeg, cloves and cinnamon and stir until the dry ingredients are just moistened.
- Stir in apple cubes.
- Pour into the greased loaf pan and bake at 350F for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cool for 10 minutes in the pan, then cool completely on wire rack.
- Wrap tightly and store in the refrigerator.
