My go-to choice when I’m in the mood for creamy butternut soup. The melded flavors of sweet potatoes, carrots, and squash are balanced out by the salty bacon and leeks.
A bit of herbs, a can of beans, a container of broth/stock, and your squash and kale and you’ve got a hearty soup that’s packed with flavor and nutrients.
This particular recipe was inspired by World’s Healthiest Foods and turned out quite lovely. It fills the house with the warm smell of cinnamon and sweet onion while it simmers. The finished dish is naturally sweet and the squash has a creamy consistency.
The color of this soup is really quite nice. A beautiful shade of orange that’s not too bold, and not too boring.
